{happy father's day}

Who am I celebrating this year? 
  This summer my dad is leading his family to Costa Rica to bring joy into many childrens' lives, a trip he's been on 5 times. [selflessness]  This year my dad completed his 18th marathon.[strength]  Next year is his "year of marathons", one each month.[perseverance] This year my dad is 60.[grey hairs of splendor] This year for Father's Day he will be riding in the Bike Tour of Colorado with my brother and brother-in-law.[brave]
 I am celebrating my dad, THE IRONMAN.[crazy]

Summer Drink Series {coconut margarita}

Coconut margarita, summer friends, flip flops......Yummy! 






Ingredients

  • 1 cup sweetened shredded coconut
  • 1/2 teaspoon salt
  • 1/2 cup freshly squeezed lime juice, plus 2 tablespoons for glasses (about 5 limes)
  • 3/4 cup Coco Lopez or cream of coconut
  • 1/2 cup plus 2 tablespoons tequila
  • 1/4 cup Cointreau or other orange liqueur

Directions

  1. Preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with the salt. Spread on sheet; toast in oven, stirring frequently, until golden brown, 8 to 10 minutes. Let cool, then crush with your hands until crumbly.
  2. Pour 2 tablespoons lime juice into a shallow dish. Place coconut mixture in another dish. Dip rims of two cocktail glasses in lime juice, then in coconut mixture, coating well.
  3. Combine remaining ingredients with 1 cup ice in a blender; puree until smooth. Divide evenly between prepared glasses, and serve immediately.

Summer Drink Series {blueberry mojitos}

while celebrating my 31st....i came across this delight of a summer sipper... and my mojito mint is growing out of control.....

or maybe in a cupcake?  



Blueberry Mojito

Provided by: Mixologist Greg Harrington
New York Magazine 

Ingredients

8 blueberries
6 to 8 mint leaves
3 ounces club soda
2 ounces Bacardi Limón
1/2 ounce simple syrup
1 lime wedge or splash fresh lime juice
Garnish: Mint sprig and additional blueberries

Instructions

Muddle the blueberries and mint with a splash of soda in a shaker until they're crushed. Fill a shaker with ice, and add the Bacardi, lime, and simple syrup. Shake together, strain into a glass filled with ice, and add the soda. Garnish with mint and blueberries.

Clean Eating....you can do it.





The crew had Easter brunch at our house this year.  It was different, delightful, and delicious. We decided to have a "clean" meal of grilled peaches over pork chops, sweet potato fries, fresh green asparagus, a basil-watermelon salad and mint tea. Nothing we ate was canned, fried, buttered, sugared....and it was delicious! We even had dessert! of clean carrot cake with fresh lemon icing!! If our family can do it, so can yours...







Here are the rules of clean eating: 
1. Choose fresh, unprocessed foods over canned or processed products. 



2. Eat lean meats, and choose organic or grass fed meats when possible as these foods are usually clean of pesticides, hormones and additives. Grill, broil or steam your meats rather than frying.
3. Try not to purchase foods that have more than 3-6 ingredients in the ingredient list.
4. Avoid sodas and high calorie, sugary drinks. Follow the tenant of clean eating that aims to remove added sugars from the diet. Choose water or tea for your beverages.

5. Lower your saturated fat intake by avoiding fast food, choosing lean cuts of meat and getting your fat calories from foods like nuts and fatty fish.

6. Eat several small meals to keep blood sugar stable and to avoid overeating.

Easter at South Rocky Point


This year, Duncan & I are hosting Easter Brunch at our casa! I'm most excited about using my wedding china, egg place cards :-) but mostly about the menu that our family came up with.  Several family members are on the eat clean diet, and what a way to celebrate by honoring our bodies and not eating sugar, salt, butter.....The Easter Bunny will be making his rounds at 82 South Rocky Point and there will most definitely be a golden egg probably full of coins instead of candy!   Happy Easter to you! Lime Green Beachcruiser

'just wakin up in the mornin gotta thank God, i don't know but today seems kinda odd... today was a good day" -ice cube

The weather dropped 20* before I left school, so on my way home I decided to enjoy the 65* weather because in a few weeks it will be too hot to go outside in Houston! I rode my lime green beachcruiser with Waylon to meet my niece & nephew at the park. They played soccer while Judith and I ran hills. It was awesome. On the bike ride home, I thought of all the things I was thankful for besides the beautiful day:
